Ingredients
- 8oz (about half a box) of gluten free pasta
- 1 avocado mashed
- 1 tablespoon of Himalayan pink salt (for pasta water)
- 6 cups of boiling water
- 1 package of spinach
- 4 cloves of garlic minced
- 1 tablespoon hemp oil
- 2 tablespoons tomato paste
- 1 can of black beans drained
- 1/8 teaspoon of black pepper ground
Cooking instructions
- Boil water and salt for pasta in pot on high heat
- Once water boiled add pasta and cook for 6-8min until desired tenderness is reached
- Strain pasta leaving a little of the pasta water left in the pot
- Heat pan over medium with oil, garlic, tomato paste, and mashed avocado for 5-10min
- Strain beans and add to pan
- Add pepper, pasta, spinach and just enough of the pasta water to coat the bottom of the pan
- Cook for another 5-10min until spinach is cooked down
