Ingredients:
- 1 box chickpea pasta
- 1/4 teaspoon pink salt
- 2 avocados
- 2 tomatoes
- 1 onion
- 4 shallots
- 2 cloves garlic
- 2 tablespoons olive oil
Cooking Instructions:
- boil water for pasta and cook for 7-9 minutes
- dice onion, shallots, garlic and add into a saute pan to cook with oil ans salt
- dice up tomatoes and avocados put to the side
- mix pasta with cooked veggies for a couple minutes then add in tomatoes and avocados for just enough time to get them heated
*Grilled or baked asparagus is great on the side.
